StORAGE
Supplied: Insulated box at -18C
Freezing: Will arrive frozen, use by best before date on packaging

WHERE IS YOUR MEAT BUTCHERED?
All of our meat is butchered in our in-house organic butchery by our small, experienced team.

Cut out the inner ear ridge sections to leave the outer portion intact.

In a pan of boiling water simmer your ears for 4-5 hours until tender, then drain, cool, pat dry

Sprinkle the pig's ears with crushed sea salt then cut into thin strips

Cover with flour and fry in duck fat until crisp and golden
